The 2019 Estate Blanc de Blancs is a traditional method, low-intervention sparkling wine produced by Winemaker Thomas Savre, Assistant Winemaker Kimberly Abrahams, Cellar Master Joe Ferris, and Cellar Hand Chase Martin. The grapes for this small-batch wine were sourced from the very first pick of the 2019 harvest, from two blocks within our estate vineyard. After gentle extraction, fermentation occurred spontaneously. Cold cellar temperatures helped select the strongest strains of ambient yeast, which would later complete the fermentation within the bottle, ensuring precise flavor development and carbonation. In December of 2019, the wine was bottled with a small amount of residual sugar to ensure fermentation would finish in bottle, releasing CO2 to give the wine its effervescence. Later that year, riddling took place – each bottle was turned upside down and rotated slightly each week until all of the residual lees had settled into the neck of the bottle. In August of 2020, each bottle was hand-disgorged and sealed with a crown cap with no added dosage or sulphur. Truly a labor of love and intention, we are thrilled to share this wine with you!
